Layered guilt-free ice cream

Few things are as satisfying on a hot day as an epic ice cream.
This one comes with two layers, combining a vanilla/banana flavour with the sharp taste of blueberry.
Blueberries are a superfood thanks to their antioxidant content so this recipe can be filed under the "good for you" category without any guilt.

Ingredients
Makes enough for 2
2 bananas, sliced & frozen for at least 4 hours
180ml coconut milk
250g frozen blueberries
3 drops of vanilla essence

Method
For the white layer, blend the bananas with 80ml of coconut milk and a few drops of vanilla essence until smooth.
For the purple layer, blend the frozen blueberries with 100ml of coconut milk until smooth.
You may need to scrape down the side of the blender with a spoon a few times.
Serve immediately.
Top with nuts, seeds and coconut chips.
