Quinoa and chia porridge

For those of you unfamiliar with quinoa, it is a gluten free grain originating from South America.
Unlike other grains, it contains a good amount of protein, iron, magnesium, manganese and phosphorus, making it a pretty healthy choice for porridge.
With British farmers taking to growing quinoa it's a good time to start experimenting with this nutritious grain. It is readily available form most supermarkets as well as health food stores.
For this recipe, I combined quinoa with chia seeds to create a delicious gluten free porridge.

 
 

Ingredients for 1:
50g dry quinoa
150ml almond milk
1 tbsp chia seeds
1 tsp honey
2 drops of vanilla extract

Method:
Wash the quinoa in cold water, rinse and put in a small pan.
Pour the almond milk over the quinoa, put on a hob over a medium heat and bring to boil. Turn down the heat to low, pop a lid on the pan and allow the quinoa to simmer for 10 minutes.
It should've absorbed most of the almond milk by the end of the cooking time.
Take the quinoa off the heat, stir in the chia seeds, honey and vanilla extract and stir well.
Allow it to stand for minutes before serving.
Top with your favourite fruit combo. I used frozen berries and passionfruit.
