Super speedy frozen yoghurt

Now that the British summer has finally arrived, it is time for some frozen treats.
Save yourself the guilt of overindulgence by making this delicious frozen yoghurt.
Not only does it only contain three (normal) ingredients, it can be made in a mere two minutes. Perfect for when the kids are screaming after the ice cream van or you need an instant sweet treat.
Keep some bananas in your freezer and you'll have an unlimited supply of frozen desserts all summer (by my estimations summer will last at least 3 more days in Britain).

Ingredients for 5 scoops:
100g organic natural yoghurt (I used Yeo Valley)
2 bananas, peeled, chopped and frozen for 4 or more hours
5 drops of vanilla essence

Method:
Simply put all of the ingredients in a high-speed blender and blend until smooth (around 1-2 minutes). You may need to scrape down the side of the blender with a spoon a few times.
Scoop the frozen yoghurt into a bowl and serve immediately.
Top with berries, nuts and seeds if desired.

In case you haven't yet invested in a high-speed blender, I use the Optimum G2.1 by Froothie UK (http://www.froothie.co.uk/introducing-the-optimum-g2-1-platinum-series-blender.html). Having tried a fair few blenders, I can vouch for this as one of the best on the market.
