Wholefood Brunch x Oak Tree Farm

The August brunch was tonnes of fun, so a second Wholefood brunch in collaboration with Oak Tree Farm is happening on the 22nd of September, just outside of Nottingham, weather permitting.

Yes, I totally got carried away.
Truthfully, it’s a rare privilege to have a fantastic grower who not only utilises organic principles but also gets excited about doing things the right way with minimum environmental and maximum health impact.
The wonderful team at Oak Tree Farm do just that, and, quite frankly, it should be celebrated.
Luckily for us, August and September happen to be a great representation of edible flowers, flavoursome leaves and fragrant herbs and I really want you to experience these carefully grown plants at their very best.
Unless you happen to be growing your own, you’ve probably never had the pleasure of appreciating herbs and vegetables picked a few minutes ago. Yet nutritionally, and flavour-wise, this is when they are at their peak.
So I’m going to try my best to turn the beautiful, freshly picked ingredients from the farm into 5 creative dishes.
You’ll learn about new plants and gather new nutrition knowledge as we explore the best of what the Oak Tree Farm garden has to offer.
You’ll enjoy brunch in the garden surrounded by the tranquillity of fragrant plants. There are even some chickens, ducks and alpacas around.

Expect a 2 to 3-hour brunch experience for £55 per person, including:

  • A welcome botanical spritz

  • A 5-course veggie, gluten-free brunch, utilising the best, freshest ingredients from the farm. Each course is dedicated to a particular group of plants, exploring edible flowers, leaves and herbs. Designed/ made by Eva and supported by Michelin-starred chef Mark (more about Mark here)

  • A mini nutrition talk by leading BANT registered nutritionist Eva Humphries (that’s me, hi)

  • A herbal infusion (aka freshly made tea) to finish

  • A tour of the culinary and medicinal garden including a talk by farm owner Jane (More about the farm here.)

The ins and outs:

- The Wholefood brunch is a limited event for 12-16 people taking place on Sunday the 22nd of September.
- Arrive at Oak Tree Farm for 10am. The exact instructions will be sent to you once we have your booking.
- Seating is in the garden on outdoor picnic tables with benches. These are wooden picnic tables that each seat 4 people. If you happen to book on as a one or two then expect to share your table with other people.
- Owing to the layout of the farm and the location of the tables, regrettably, it is not accessible by wheelchair users or individuals with reduced mobility. You’ll need to be comfortable walking up a small hill covered in grass and around the garden on uneven ground.
- We will be embracing whatever the weather throws at us, unless it is torrential rain, so please dress sensibly. High heels probably won’t get you far in the garden.
- The menu is designed to make the most of the produce available from the farm with each course devoted to a group of plants. I will be cooking for you, leaning into flavoursome dishes that aren’t your bog-standard brunch options. Aka there won’t be any “stuff on toast”-style dishes.
Expect flowers, leaves, herbs and eggs from the farm, prepared in creative ways.
- A note on allergies. The menu is vegetarian and gluten-free. Unfortunately, I am unable to cater for any other dietary requirements at present. It is just me cooking for 12-16 of you in an outdoor setting with minimum equipment, so as you can imagine, it’d be pretty tricky to create multiple versions of the same dish.
- Your booking is prepaid and non-refundable. Please only book if you would actually like to attend.
- In the eventuality that the event cannot be held because of extreme weather then you will receive a full refund. Note: a little drizzle isn’t extreme weather.

Gut health is trending.
Actually, it’s a topic nutritionists know too well because it is often the first thing we look at when working with individuals.
It’s, quite literally, central to our wellbeing.
In fact, gut health is so important that Hippocrates once coined the phrase “all disease begins in the gut”.
His logic was sound but luckily we’ve made some advances in medicine since then (for context Hippocrates was a Greek philosopher from 2000 years ago).
What we should consider instead is our digestive system “decides” how many nutrients we absorb from our food. Effectively, we aren’t what eat, we are what we absorb.

Here is where things become more complicated.
Our gut is home to trillions of microbes that can either help us feel amazing or contribute to poor health.
Which end of the spectrum we may find ourselves on depends on how well we look after our gut microbes.

Nutrition Principles for Healthy Ageing

Let me start with a little-known fact that is nothing short of a major crisis. 
Our healthy life expectancy, aka the age we can expect to live to in good health, is tumbling. 
Sure, we will likely live to circa 82/83 but our healthy life expectancy now stands at a mere 62/63. (+/- a few years depending on where you may live, it’s a bit less up North and a bit longer if you are located in the South of the country.)
With the current retirement age set at 66, the low healthy life expectancy means working for at least 4 years with a chronic condition. It means spending the vast majority of retirement with multiple illnesses.
I don't know about you, but personally, I didn't sign up for this.

Your Microbiome - The hidden secret for improving your wellbeing

Did you know the human body harbours 10x more microbial cells than human cells?
Let me introduce you to your microbiome, a community of microbes that live in the gut, on the skin and elsewhere in the body that are crucial for your overall wellbeing.

Ok, don’t freak out, but we all have a large number of microbes on us. They are, mostly beneficial, in fact, we actually need them to stay healthy.
The largest collection of these microbes are in the gut, where their main job is to ferment the fibre we can’t otherwise digest.
In exchange for the fibre, the microbes send us “thank you gifts”, namely things like biotin, Vitamin K and short chain fatty acids that then directly nourish us. We have this mutually beneficial agreement with them whereby we give them somewhere to live and they help us be healthy.

This relationship isn’t so simple though.
Our microbiome actually has an effect on most of our body, including:
- the way we digest our food. Bloated? This will likely be down to an imbalanced microbiome.
- the absorption of nutrients - without these little organisms, we can’t obtain all of the nutrients we need
- hormones - yes, even our hormones are affected by bacteria
- brain health and even your mood - you know those brain chemicals that make you feel happy? They are very heavily influenced by the microbiome.
- the skin - eczema, psoriasis, dermatitis and acne may all be linked to the microbiome
- the immune system - the microbiome strengthens the immune system
- weight gain/ loss - struggling to lose weight? An imbalanced microbiome may be at play.
& many many others

So why am I telling you this?
Your microbiome is quite literally the hidden secret to improving your wellbeing.
Sadly, we don’t pay enough attention to it so most of us live with some depletions in our microbiome but with some small tweaks and few new foods added, the microbiome can be harnessed to our advantage.
It is a crucial piece of the health puzzle that could be keeping you from feeling amazing every day.

Did you know there is a huge link between what you eat and how you feel every day?

Sadly, for the majority of us, the relationship between food and our mood isn’t obvious and thus we often ignore the warning signs.
Take, for example, a stressful period of time. Ever noticed that you still feel low after the stress has been dealt with? The reason is the inflammation left behind by the stress. The answer is dealing with said inflammation through the addition of foods that are high in anti-inflammatory compounds. (Big words, I know, but it’s actually pretty simple to implement.)
This process described above is lesser-known, so we blame that stressful job/ lockdowns/ general life stuff and hope that one day it gets better.
The truth is, it can get better now with a few clever changes.

Our mood is heavily influenced by a set number of nutrients, the lack of which changes how we feel in ourselves.
Get it right and you can build a new level of resilience with food.
Let me give you a few more examples:
- dehydration (simply not drinking 6-8 glasses of water) is the biggest cause of fatigue
- your gut bacteria can virtually hijack your brain and make you feel not ok
- your morning coffee may be responsible for those afternoon mood swings (don’t worry, you can still have the coffee, it’s all about timing it right)
